He is and remains my beloved... the goat cheese! Its spicy aroma and the soft feeling, when it melts on the tongue, will probably never let go of me. At any season he finds his way into a recipe. Just like in this delicious summer quiche with red and yellow cherry tomatoes from the garden. I love to pick the colorful pearls one by one from the bush and to nibble again and again. In the mouth the tender skin bursts and the fruity acidity tickles so wonderfully!Embedded in a gently spicy goat cheese, my tomatoes really come into their own. They play hide-and-seek, and here and there they reappear on the surface. The quiche, which might otherwise have looked a bit boring, suddenly appears in a dotted robe. And let's be honest... Who can say no to edible art?
For a coated 28 tart tin
For the dough:
250 g spelt flour Type 630
125 g cold butter
50 ml ice-cold water
1 egg yolk
1/2 tsp sea salt
1 go. TL fresh thyme needles
Some flour for the work surface
Butter for the dish
For the covering:
300 g goat cream cheese (note props: e.g. Chavroux)
2 eggs
200 ml cream
1/2 tsp sea salt, coated
fresh ground pepper
1 tbsp fresh thyme leaves
some freshly grated nutmeg
20 colourful cherry tomatoes (red, orange)
Yellow and orange calendula flowers for decoration
For the dough, put all the ingredients in a bowl, knead quickly together and form a smooth dough ball. Grease the tart tin. Lightly flour the working surface and roll out the dough thinly to the size of the baking pan.
Press the dough into the mould, prick the bottom with the fork several times and place in the freezer. In the meantime, preheat the oven to 180°C circulating air. Pre-bake the quiche base in the middle rail in the oven until it is light brown.
Mix the goat cream cheese with the eggs, cream, sea salt, pepper, nutmeg and thyme. Wash the tomatoes and cut them in half in the middle. Spread the goat cheese cream on the pre-baked quiche base, place the tomatoes with the open side facing upwards and bake the quiche in the oven for another 25 minutes until golden brown.
A green salad with many summer herbs is an excellent accompaniment.
